The Tomić Winery
Our new winery is situated in Jelsa, a small coastal town with a long winemaking tradition. We produce between 130,000 and 150,000 bottles a year and, alongside the members of our family Tomić, twelve other people from the island of Hvar work to achieve that.
We cultivate autochthonous grape varieties and knowledge, but we experiment with new ones as well. Constantly enhancing the production of red, white and rosé wines with modern technologies, we strive towards making them ever better. We pay particular attention to the production of Prošek – the original Dalmatian desert wine made from selected and dried grapes of the highest quality local varieties.
We have integrated the HACCP (Hazard Analysis of Critical Control Point) self-control system throughout the production facility, thus ensuring wine quality and safety. (Tomić Winery is also equipped with a laboratory where we perform analyses of basic parameters to control the quality of wine during all stages of production and aging, as well as controlling the quality of finished wine. An external certified institution conducts final analyses of wines before they are shipped to market.)
We are especially proud of our wine tasting venue, buried in stone bellow the winery and modelled on the ancient Roman dining room called triclinium. It is carved out of stone, with ceilings made out of tufa and pillars made out of travertine, which was the method of construction used in Diocletian’s cellars. We intended it for ourselves, as well as anyone else who wishes to escape the world for a while and experience Hvar’s history, wines and stones in their indivisible connection.
BELECA – dry white wine, quality wine
Beleca is a dry white wine. It is a blend of two autochthonous Croatian varieties: 50% Pošip and 50% Bogdanuša.
Grape varieties: Pošip (50%) and Bogdanuša (50%)
Locality: Jelsa, Vrboska, Vrbanj, Dol
Alcohol: 12.5-13%
Size: 750 ml
It is served chilled, at a temperature of 10-12 °C. It is recommended as accompaniment to white meat, fish and shellfish dishes, as well as to spicier dishes such as pesto, hard cheeses like Pag Island cheese etc.
POŠIP – top quality white wine
Pošip is a top quality dry white wine. It is the white wine from our premium range, and we consider it an upgrade from Beleca as it combines freshness with the more complex range of aromas of riper fruit, combined with subtle oak influence/oak aromas and flavors. Grape variety: pošip
Locality: northern side of Hvar Island, Ager (between Jelsa and Stari Grad) and the southern side of the island (vineyards around Milna and Hvar).

OPOLO NOBILE – dry pink wine, quality wine
Rosé wine Opolo Nobile is made from Plavac Mali grapes using a special technology, similar to that of white wines. Skin contact or maceration is minimal, up to 6 hours, which gives this wine an attractive, delicate pink colour, similar to rosé wines of Provence. The aromas are those of young wine and fresh red fruit (raspberries, strawberries), with floral notes and a touch of saltiness on the palate.
It should be consumed as a young wine, a one-year old wine, until the next vintage.

Serve chilled to a temperature of 10-12°C. It pairs very well with light dishes, hors-d’oeuvres, pastas, risottos, carpaccio, etc.
PLAVAC TOMIĆ – dry red wine, quality wine
Plavac Tomić is particularly noted for its softness and elegance which we try to obtain from the otherwise arrogant nature of this autochthonous Dalmatian variety.
Plavac Tomić is our bestselling wine and our strongest brand. For years, Plavac Tomić has been debunking the myth that the quality of Plavac wines must be accompanied by a high price. That is why it has become a synonym for value-for-money or good price-per-quality on the Croatian market.
Grape varieties: Plavac Veliki and Plavac Mali (with traces of Drnekušica)

Served at room temperature (18-20 °C), Plavac pairs well with a variety of meat dishes, tomato sauces, bruschettas, dried tomatoes etc.
PLAVAC MALI – dry red wine, top quality wine
Plavac Mali wine is produced from the grape variety of the same name. This wine is in our top quality range which we produce only in the best years and in small quantities. Plavac Mali is above all the product of its terroir, i.e., the sum of natural influences in the vineyard. The final special quality of our Plavac Mali lies in its “French” type of elegance, as this wine has a tendency towards preserving both the classic of Plavac Mali aromas, as well as the style of Old Continent wines, focused on structure, complexity and the duration of flavour.

Its character will be best appreciated if served at 18-20 °C. This wine makes a first-rate match with spicier dishes, roasted meat and especially with Dalmatian culinary specialties such as brudet (a type of fish broth), pašticada (stewed beef served in Dalmatian gravy sauce) etc.
CAPLAR WINE – dry red wine, top quality wine
Caplar wine is, as its name suggests, and innovative coupage of Cabernet Sauvignon and Plavac Mali.
Plavac Mali grapes grown on the southern slopes of Hvar and Cabernet grapes from our vineyards on the northern side of the island are vinified separately, after which they are blended and aged for six months in barrique barrels.
The result is a wine of softer tannins, in which the intensity and varietal aromas of Plavac are refined by the elegance and freshness of Cabernet. Characteristic flavours of plums, dried grapes and earth are complemented by aromas of blackcurrant, spices and other undertones. We predict that the wine has a greater potential for aging than other Plavac Mali wines. Every bottle proudly carries the signature of the winemaker which stands behind the idea printed on the label: “Produced in collaboration between Hvar, love and knowledge.”

It is served at a temperature of 18 °C. It is recommended as accompaniment to fried steak and red meat and game dishes, as well as various other dishes of a richer taste.
VELIKI PLAVAC MALI – dry wine, top quality
Veliki Plavac Mali is the last wine in a series of Andro Tomić’s passionate projects – it is produced only in exceptional years and bottled only in magnum bottles (1.5 liter). Previously it was possible to try this wine only at Tomić Winery on Hvar Island.
For this wine we use only the grapes from select vineyards located at the best positions on the southern side of Hvar Island. The extreme conditions of the steep and sunny slopes on the southern side of the island (Ivan Dolac, Sv. Nedjelja, Jagodna) impose the organic approach as the only choice – in other words, manual labour, with minimal intervention into natural processes and resulting in small yields of highest quality grapes (0.5 to maximum 1 kg).
The wine is characterized by strength, robustness, high extract. The structure and acidity balance well its alcohol content of almost 16%. During aging, the wine develops tertiary aromas of tobacco, leather, mushrooms and forest floor.

SV. KLEMENT – dry red wine
Sv. Klement wine comes from the vineyard on the island of Sv. Klement (St. Clement), one in a chain of islands in the Hvar archipelago.
Sv. Klement (red) is obtained from grapes grown on Pakleni Islands. With this wine we wanted to transfer the classical combination of “Bordeaux blend” varieties to a Hvar location at which autochthonous varieties such as Plavac would not produce top quality results. In this vineyard situated at sea level, the combination of Cabernet, Merlot and Cabernet Franc however proved to be perfect. The wine is not yet eligible to carry the appellation of origin and grape variety, but we are certain that it deserves it due to its quality.
Grape variety: Cabernet Sauvignon 50 %, Merlot 40%, Cabernet Franc 10%

Served at temperature of around 18 °C it is a great match to red meat, game and oily fish, and pairs well with many other full-flavored dishes too. Award: Gold medal Gast 2005.
PROŠEK HEKTOROVICH – sweet dessert wine
Prošek is an authentic Croatian dessert wine, made using dried grapes of the finest indigenous Dalmatian varieties.
Prošek is a natural sweet wine that originated in the coastal part of Croatia where it has been produced for centuries. According to the legend, even emperor Diocletian enjoyed “vinuum sanetum” or “the holy wine”, as it was called then, when he came to Split in the year 305.
Prošek Hektorovich is produced from local white grapes: Pošip, Maraština, Yellow Muscat, Prč, and other native grape varieties.
Produced in the traditional way, Prošek Hektorovich is made by harvesting fully ripe grape bunches with some dried grapes intermixed, grown at specially selected locations, which are then dried on straw in well ventilated spaced (traditionally in the attic).
This traditional way of production is identical to the so called passito method that is used to make the Italian Vin Santo and other traditional Mediterranean sweet wines.
The resulting wine is sweet, but well balanced by the acidity, characterized by the ripe aromas of dried fruit – dried apricots, dried figs and raisins – and orange peel, as well as aromatic floral notes. Ageing contributes to its complexity, adding tertiary aromas of honey, caramel and toffee and developing savory notes; Prošek can age for a very long time. It is a custom to set aside a demijohn of Prošek when a child is born, which they will later open to celebrate their wedding or another special occasion.

Residual sugar: 110-130g/l
Size: 500 ml
Serve chilled to a temperature of 10-12 °C.
This wine pairs wonderfully with desserts, especially dried figs and the traditional Dalmatian bisciuts, as well as blue cheeses. Small children also tend to like it very much, so make sure to keep it out of their reach.
PROŠEK MORO – Sweet dessert wine
Prošek is an authentic Croatian dessert wine, made using dried grapes of the finest indigenous Dalmatian varieties.
Prošek Moro is a premium sweet dessert wine, valued for its uniqueness and quality. Produced in the the traditional way, Prošek Moro is the product of carefully picked more mature Plavac Mali grapes with some dried grapes intermixed, grown at specially selected locations, which are then dried on straw for up to a month. Moro is aged for about two years in barrique barrels. The resulting wine is irresistibly sweet and rich but well balanced in taste with the varietal aromas of plums and dark cherries, dried figs, raisins and notes of caramel, leather, tobacco and sweet spices.

We recommend enjoying it with a variety of desserts, blue cheeses, etc.
EUFORIJA LIKER – CARBON SAGE
This liqueur is created macerating dried carob pods and dried sage leaves in wine distillate.
Carob is a Mediterranean evergreen tree that bears edible brown pods. Interestingly, carob pods contain seeds which, regardless the size and storage conditions, always have the same weight of exactly 0.18 grams. For this reason, the seeds were used for weighing gold in ancient times, and the name for the unit of weight measuring 0.18 grams of gold persists to this day – carat. For the past 4,000 sage has enjoyed the reputation of a miraculous herb that cures many diseases. Ancient Roman scientist and writer named it Salvia after the Latin verb salvum, meaning ‘to save’ – in other words: savior.
Alcohol: 35.5%
Sugar: 190 g/l
We recommend enjoying it well chilled. It is ideal as a companion to desserts or addition to cake fillings.
EUFORIJA LIKER – CHERRY
Euforija sour cherry is one of the products from our premium range. It’s a liqueur created by blending authentic Maraska cherry extract and wine distillate. The tradition of growing Maraska cherries in Dalmatia is more than 500 years long. Compared to some other sour cherry varieties, Maraska has smaller barriers and is more tannic, thus more suitable for spirit production. The aristocracy called this liqueur “the king of all liqueurs.”
It is sweet and rich in taste with intensive flavors of ripe black sour cherries.

Sugar: 180 g/l
